Mango & Red Raspberry Parfait
1 Cup Red Raspberries
½ Cup Oatmeal
½ Cup Pine Nuts
½ Teaspoon Saigon Cinnamon
2 Cups Chobani Greek Yogurt – Vanilla Blended – Simply 100
½ Teaspoon Dried Mint (Optional)
1 Teaspoon Rose Water
2 Tablespoons Honey (or Agave)
Place the oatmeal, pine nuts and cinnamon in a dry frying pan. Cook over medium to low heat for 2-3 minutes, until toasted. Watch carefully.
Add dried mint, rose water and honey to yogurt. Mix well.
Create your parfait. Layer oatmeal and pine nut mixture on the bottom. Add fresh berries and mango. Top with yogurt mixture. Repeat.
