2 Cans Chickpeas
1 Cup Celery - chopped
1 Cup Red & Yellow Bell Pepper - chopped
¾ Cups Green Onions (White & Green Part), about 4 onions - chopped
2/3 Cup Vegan Mayonaise
1 Tablespoon Stone Ground Mustard
1 Tablespoon Chia Seed
3 Tablespoons Fresh Parsley
¼ Teaspoon Smoked Paprika
¼ Teaspoon Black Pepper
Drain and rinse the chickpeas. Mash the chickpeas. Some should be mashed completely, some half mashed, and you can leave a few whole… You are trying to develop the consistency of chicken.
Mix all other ingredients in another bowl, then add the chickpeas. Serve on bread, or eat as a side dish.
Feel free to add salt and extra smoked paprika to taste.
