Today is just one of those days where I needed something sweet and easy to serve a guest. This chocolate pudding was definitely the right call.
We, and by we I mean, my super-motivated, super-organized daughter-in-love, Tot (remember all friends and family members get a cute nickname), is in the thrust of wedding planning. She has the caterer, musician, location and all that stuff pulled together. Every time I ask what can I help with she's already on the case - I love that about her…she takes care of business. So, while she has the wedding rolling along smoothly, her mother and I, JJ, have decided to throw us a good 'ole, oops I mean throw the couple, a good 'ole family-style cookout.
Need I say more. So, in order for us to get the party together JJ and I met to plan the shower. It was late Friday, it had been a long week, we were both tired, and since she is now family, I feel it necessary to treat her like close family - I was not cooking! :-) But, I didn't want to be completely rude, so I whipped up this vegan delight. It was
and oh so delicious.
It took only a few minutes to pull everything together, you should try one tonight. I'm sure it will become a family favorite.

Vegan Chocolate Pudding
1/2 Cup All Natural Almond Butter
2 Medium Bananas
3 Tablespoons Cacao
1/2 Medium Avocado
1/2 Teaspoon Saigon Cinnamon (or regular cinnamon)
1/4 Teaspoon Almond Extract
2 Tablespoons Cashew Milk (or Almond Milk)
1 Tablespoon Agave (or honey - it will not be vegan if you use honey)
Place all ingredients in the food processor, blend well, serve chilled. Don't bite the spoon!
