I volunteered to watch three kids - 5, 3 & 2! I love them to pieces and I have been around them their entire lives, but I have to admit I became a little anxious as time got closer. I actually dreamed about the experience last night. I can't remember what the dream was about, but there was a lot of crying...I think all four of us were crying.
Nightmare on My Street!
I said a prayer for them before they got over. When they got here the transition was smooth, we played drums, hide and seek, we (yes all four of us) jumped on some furniture (we were careful), went to the pond, saw some ducks, looked for fish, played Simon Says, ran laps, played baseball, catch and learned how to get out of trouble with your parents. I taught them "the pout"...and of course we cooked - chocolate chip cookies and scrambled eggs. Three kids - you only need two eggs for cookies - left over egg...you get the picture.
It was one of the best days I've had in a while. Innocence is magical.
So, what does that have to do with popsicles? Well, I starting prepping for our day yesterday...I expected to have to lure them into my home (Ok, that sounds bad...LOL!!! And I'm not even going to try to clean it up...) so, I made homemade strawberry and orange popsicles. They were
I started with three cups of fresh strawberries, pureed in my new bestie - my food processor.
Then I added all the other stuff. It was so simple - except the waiting for them to freeze part...that was hard.

Strawberry Orange Popsicle
1/2 Cup Freshly Squeezed Orange Juice
2 1/2 Cups Pureed Strawberries (about 3 1/2 cups chopped)
1 Teaspoon Freshly Squeezed Lemon Juice
3 Tablespoons Light Agave (This can be adjusted to taste. The final amount will depend on how sweet your fruit is.)
Puree every thing in your food processor. Place in popsicle maker and freeze.
Serve to cute little kids - Eat Well!
