Twice per month my family and I go to a friends home for Sunday brunch. I'm a home body, so, while most people would jump at an opportunity to be around friends and family, I much more prefer a good book (cook book, of course) or a sitcom from the 70's or 80's. With that being said, I am also the one who always has the best time once I get somewhere. And this Sunday brunch is no exception. We have a blast! There are usually 10-12 of us there. My family and I really appreciate being a part of their family - we are the only none biological family invited - that alone makes us feel special. The conversation is hilarious and the food is always wonderful.
I now see Sunday brunch as a wonderful opportunity to bond with really special people. And, of course, it's an opportunity to stretch my brunch muscle - one of which I do not use - to come up with is Mango & Red Raspberry Parfait. It's my way to create something simple, and add something special for some special folks.
The ingredients are fairly simple, and more importantly interchangeable. Remember my motto: the best meals come out of what you already have in your kitchen. You could switch out the fruit - blueberries and pears; black raspberries and kiwi…and the list goes on.
The layering process is also something that you don't have to be married to. I started with the oatmeal and nuts, added fruit, then yogurt - repeat...but my son, S3, preferred yogurt at the bottom, then fruit, then nuts - repeat… This recipe serves four.
Mango & Red Raspberry Parfait
1 Cup Red Raspberries
½ Cup Oatmeal
½ Cup Pine Nuts
½ Teaspoon Saigon Cinnamon
2 Cups Chobani Greek Yogurt – Vanilla Blended – Simply 100
½ Teaspoon Dried Mint (Optional)
1 Teaspoon Rose Water
2 Tablespoons Honey (or Agave)
Place the oatmeal, pine nuts and cinnamon in a dry frying pan. Cook over medium to low heat for 2-3 minutes, until toasted. Watch carefully.
Add dried mint, rose water and honey to yogurt. Mix well.
Create your parfait. Layer oatmeal and pine nut mixture on the bottom. Add fresh berries and mango. Top with yogurt mixture. Repeat.
