The summer is coming to an end, and that makes me a little sad. For the majority of the summer it's been wet and cold, but the past two weeks have been glorious. Yes, I wish my weeks away; I'm looking forward to Friday around 10 p.m. on Sunday, but it's kinda for a good cause....this view from my back porch -

This morning I woke up and decided to make elderberry syrup. But you know as well as I - syrup equals waffles equals a day of uncontrollable sugar urges. And that's the last thing I need.
So, instead, I decided to brew a his (Son 3/hand model) and her (EM EEE - that's me, ya'll) cup of elderberry & hibiscus tea.

Tad bit obsessed with my Teavava tea pot. I use it twice a day every day.
I decided to use elderberry because it's high in Vitamin C (87% in one cup) and it has a good balance of Vitamin A (17% in one cup)... And one cup of hibiscus tea meets 31% of your daily Vitamin C needs.

elderberry - boost immune system, improve vision
I so enjoy a spot of tea on a cool summer morning! hahaaaa
Elderberry & Hibiscus Tea
2 Teaspoons Elderberry
1 Tablespoon Hibiscus
2 Cups Boiling Water
Sweetener of Choice to Taste - Honey, Agave Nectar (Vegan)
Place all ingredients in a tea pot that will separate berry and leaves. Brew for 3-5 minutes. Makes 2 cups.
