I decided to eat my first beet green salad - you know - the beautiful green leaves we all throw away! I now vow to never through away another beet green!! I was pleasantly surprised at how refreshing the greens are. For the salad I simply rinsed the greens and tossed lightly with a couple of pinches of salt then added beet and sweet potato chips. I'll soon post the recipe for the chips - they were sweet, crunchy, and as a self proclaimed chip aficionado I can say very satisfying - stay tuned!
Though the salad was great on it's own, I decided to add this lime and ginger dressing. I'm not a fan of most store bought dressing, plus it's just as easy to whip something up at home. By adding your own ingredients you stay in control of the sugar and salt content.

Lime & Ginger Dressing
1/4 Cup Grapeseed Oil
Zest of 1 Small Lime (about 1/2 Tablespoon)
Juice of 1 Small Lime
1/2 Tablespoon Grated Ginger
1 Tablespoon Agave Nectar (or Honey)
Pinch of Salt
Pinch of Black Pepper
Thoroughly mix all ingredients. Serve on salad, over rice, on noodles…anything your heart desires. This would make a great seafood marinade.
