I really need to get my eating back on track...tomorrow! :-) This has been a crazy couple of months. In October I lost several inches. I did a lot of weight training and clean eating, so, I was fine with only a few pounds being loss. I'm small in stature, so the lost inches went a long way in making me feel as if my hard work was paying off. I woke up at 5:30 a.m. to make it to class, when I couldn't do that, I would go to the gym as late as 8:00 p.m. I was dedicated. And then the holidays hit. German chocolate cake, tiramasu, bread pudding. I'm not sure I ate one vegetable in a four day window of indulgence. Well, it's time to get back on track.
The sugar content in this dressing could be less, but I'm more than willing to eat this recipe sans dressing. I love it when different textures hit your palate
being two of my favorites.
It's a super simple recipe, just add my homemade asian dressing, or your favorite store bought dressing, this could be on the table in less than 30 minutes.
I used buckwheat yam noodles, but you can substitute with whatever soba noodle you have in your cabinet.
This is the magic sauce.
Kale & Soba Noodle Salad
4 Cups Kale
1 Cup Green Onions (green & white parts)
2 Bundles Buckwheat Noodles*
1 Medium Red Bell Pepper
Pinch of Salt
To Taste/Optional: tuxedo sesame seeds
Break the kale into small pieces. Slice the onions and bell peppers. Boil the noodles according to directions. Mix all ingredients. Toss with my hoisin miso dressing.
