In January I always have a grand plan....it's always the same; create time to build true friendships. I'm an introvert, so it takes work. You'd never know it, I enjoy public speaking, I'm very engaged in the community and I love a good potluck, but in reality I have all the makings of a cat lady (but I'd need to be a turtle lady - less commitment). So, what's the best way to build friendships? Over food of course. My first spontaneous party was with my parents. They are getting older, I talk to them several times per day and see them several times per week...but there's nothing like breaking bread together. They didn't mind being my guinea pigs. :-) I kept it simple. An easy vegetarian dish, grilled chicken breast and a fresh fruit salad.
Wal-Mart had a crazy good selection of tropical fruit and it looked and smelled fresh. I get the import thing, but in January you get a little desperate. I hadn't had a mango in months. Use your favorite fruit in this recipe, but don't skip the meyer lemons.
You may also want to top the salad with some fresh grated ginger or fresh mint.

Fresh Fruit Salad
1 Cup Red Raspberries
1 Medium Dark Red Grapefruit
1 Meyer Lemon (zest and juice)
2 Tablespoons Coconut Sugar
1. Add first four ingredients to mixing bowl.
2. Put lemon in microwave for 10 seconds before zesting and juicing.
3. In small bowl mix lemon zest, lemon juice and coconut sugar. Heat in microwave for 15 seconds. Let cool.
4. Pour over fresh fruit. Mix and serve.
Notes: Cover your fruit and keep refrigerated for up to three days. The fresher your fruit is, the longer it will last.
