I'm back in school. Not so crazy (???), I've wanted a graduate degree for a while now. LR is in grad school, MS is a senior in undergrad and S3 is a freshman in high school - what better time, right?
I'm exhausted, broke, but SO EXCITED! I work, work out, cook, help with high school home work, then I do my homework. Very glamorous. But what I found in the middle of all of this is that I haven't been eating well. I started drinking pop (soda) again and eating lots of junk food - chocolate does have calcium (just sayin'). I know it's fake energy, but I was willing to take what I could get.
What I got was stomach pain and more exhaustion.
But no more. Instead of reaching for chocolate I'm once again reaching for this creamy edamame hummus, and other healthful snacks. And I have reverted back to protein shakes, leaving the pop at the grocery store.
If you need a healthy snack, try this one. Let me know what you think about it. I'd also love it if you would share your hummus combo's with the readers.
1 Cup Edamame
2 Garlic Cloves
2 Tablespoons Lemon Juice
1/8 Teaspoon Sriracha Seasoning
1/2 Teaspoon Cumin
4 Kalamata Olives
2 Tablespoons Kalamata Juice
1/3 Cup Tahini
1/2 Teaspoon Pink Sea Salt
1 Bunch Cilantro
3 Tablespoons Olive Oil
Place all ingredients except olive oil in the food processor. Mix well. Slowly pour olive oil in the food processor as you are mixing.
Notes: You can replace sriracha seasoning with sriracha hot sauce. If you like your hummus creamier, increase the amount of olive oil you add. The next time I make this I will put more kalamata olives in. I really love that salty olive taste.
